Dr Debashree Roy is a scientist at the Riddet Institute and Massey University in New Zealand. Her talk is focussed on the structural changes in human breast milk during digestion. She is pursuing fundamental and applied research related to food structure, digestion, and innovation. Her research is supported by the Center of Research Excellence's ‘Future Foods in Harmony with Nature’ funding. She is one of the recipients of the Pavel Jelen Early Career Scientist Award and International Pieter Walstra Science Award. She is also a co-founder at ANDFOODS, a start-up pioneering sustainable, plant-based foods using a breakthrough fermentation technology.
